Hydrogel-Based Sensors for Foodborne Pathogen Detection: Tackling Matrix Interference Through Anti-Fouling and Smart Design Strategies
Abstract
Significant progress has been made in hydrogel-based biosensors, yet food matrix interference remains underexplored. Previous reviews largely focused on material properties and signal amplification, while systematic understanding of interference mechanisms and mitigation strategies is lacking. This review summarizes these interference mechanisms and their synergistic effects, and outlines core anti-interference strategies. We highlight integrated platforms combining signal amplification, nanomaterials, microfluidics, and machine learning, which substantially improve detection in complex matrices. Finally, we discuss current challenges and future directions toward standardized, field-deployable sensors for real-time food safety monitoring.
