From nano-aggregates to macroscopic fibers: an integrated framework reconciling phase separation and laminar flow theories in high-moisture extrusion

High-moisture extrusion (HME) has emerged as a key technology for converting plant proteins into meat analogs with fibrous textures resembling animal muscle. Despite growing research interest, the multi-scale mechanisms governing fiber structure formation during HME remain incomp...

Food-Specific Challenges and Stabilization Strategies for Replacing Synthetic Pigments with Natural Pigments

Abstract Driven by regulatory restrictions, clean-label trends, and health concerns, the food industry is transitioning from synthetic to natural colorants. This review analyzes this transformation, first outlining key drivers reshaping the food coloring landscape. It then evalua...

Cryo‐EM Structures of Sunflower Amyloid Fibrils Reveal Two Distinct Disulfide‑Linked Assembly Modes

ABSTRACT Sunflower meal is an abundant but underutilized plant protein source. Recent studies have demonstrated that its amyloid fibrils exhibit exceptional functional properties, yet the atomic‐level structural basis remains unknown. The first cryo‑electron microscopy (cryo‑EM)...
